Dr. Martini from the Department of Nutrition, Dietetics, and Food Sciences at Utah State University is a chemist and food scientist with expertise in cocoa solids. A recipient of multiple awards, she directs the Aggie Chocolate Factory, which sources beans and produces and sells chocolate, and trains the next generation of food scientists.
